Simple Mediterranean Salad Dressing

Whisk together Regency olive oil, lemon juice, minced garlic, Dijon mustard, dried oregano, salt, and black pepper. Let the dressing sit for at least 10 minutes. Drizzle the dressing over your favorite Mediterranean salad or use it as a marinade for grilled vegetables or chicken.

Garlic Roasted Vegetables

Toss together your favorite vegetables (such as carrots, zucchini, bell peppers, and mushrooms) with minced garlic and Regency olive oil. Roast in the oven at 400°F for 20-30 minutes, or until tender and lightly browned.
